Chef Aaron Verzosa and partner Amber Manuguid will soon open Archipelago in the space formerly occupied by the late (and sorely missed) Eyman’s Pizza. According to a nice preview in SeattleMet, the menu will focus on “progressive Filipino American cuisine” drawing on Verzosa’s experience working in culinary research at the Modernist Cuisine lab in Bellevue.
The new spot will be more fine dining than casual; in fact Verzosa plans to limit meal service to an 8-10 course tasting menu, with two seatings per evening. In the spring, Archipelago planned an opening date of “early summer 2018” (you know how that goes), so keep your eye on the Rainier Ave. storefront between the Union Bar (soon to reopen as Twilight Rainier) and Lee’s Martial Arts. Meanwhile, Archipelago has set up an Instagram feed and a Facebook page for updates.
